Looking at an old recipe on my blog for dry hop amounts/ratios, my skin crawls to see that I would cold crash in a bucket, rack into a keg openly, dry hop bagged for a day & pull out the bag to load it back up w/ hops and drop it back in the keg. Things were simpler under Obama.

@ChristensenEmma In 2010 you wrote about a simmer solution. At the end you suggested using a cast iron pan as a diffuser - brilliant! I cook rice on my gas stove at 8,000 feet and this will not only control the simmer but also catch any overflow. Thanks!
