STOP CALLING IT AN AIR FRYER ‼️ You will find out why in this post👇🏽 Everyone is rushing to buy air fryers because we've been told it's the "healthy" way to fry chicken. But there's barely any oil in the machine. A good question would be: How does a plastic box turn a raw potato into crispy chips in 15 minutes? There is something you don't know. The name "Air Fryer" is just smart marketing. It doesn't deep-fry anything. It's actually a high-speed convection wind tunnel in a compact box. Don't run please. I'll break it down. Inside the top of the machine, there's a powerful heating coil, like the one in your electric iron. Right above that coil is a solid fan. When you turn it on, the coil gets red hot and the fan blasts air past it at high speed. This superheated air is forced down into the basket and hits your food from every angle at once. Comparatively, in a regular oven, hot air just sits there. But in an air fryer, the air is moving so fast it strips away moisture from the surface of your food instantly (remember our microwave class?). That's what creates the crunch. Engineers call this the Maillard Reaction. It's the same thing that happens when you deep fry in oil, except that in this case, the oil (air) is just very fast, and very hot. This is why the basket has holes. The air needs to rush through the bottom and circulate back up so the food doesn't just cook on top while the bottom stays soggy (wet). It's a really cool, smart and efficient way to cook because you're not waiting for a giant oven to heat up.
