Your instinct will be to scale. Don't, more app replicas means more connection pools, and you'll kill the DB faster. Find the bottleneck first; nine times out of ten it's the database. Then, shed load deliberately: waiting room, aggressive rate limits on signup. Pick what breaks instead of letting it get picked for you. Put pgbouncer in front of Postgres for connection pooling, and resize the db instance if the throttled load still won't fit. Degraded beats down. Slow signups with a queue is a growth story whereas six hours of hard downtime and the wave is gone - that traffic doesn't come back.
