Two restaurants opened a few blocks apart. First one had a fancy menu—thirty-some items, chef with a pedigree, nice PR write-up, photoshoot and all. The second? Had a dozen things on a chalkboard menu and mismatched chairs that looked like they came from somebody’s attic. Eight months later, the first one closed its doors. The second? They’ve got a three-week waitlist. What made the difference? The first one was chasing attention. The second one knew exactly what it was and why it existed. That’s the whole thing. That’s the work. ⸻ The Question Most People Never Ask When someone tells me, “I’m opening a restaurant,” the first thing they wanna talk about is food. “Should we do a gastropub?” “Farm-to-table but casual?” “What’s trending right now?” And look, I get it. Food’s important. But that ain’t where I start. The question I always ask first is: How do you want people to feel when they’re in your space? Because that’s your product. Not the burger. Not the look. Not even the menu. The feeling. If you don’t know what kind of experience you’re trying to create, then all the design and branding in the world ain’t gonna save you. You’re just another place trying to fill tables. And there’s plenty of those already. ⸻
