The platform hosting Cowtown Eats is going out of business as of Sept. 30, 2025. Since I haven’t regularly updated the site in more than 7 years, I won’t be moving it to a new home. It was fun while it lasted.

Had my meal of the year thus far at Chu Mai, the new-ish restaurant by Bill Ngo of @krusacramento. Well balanced and inventive flavors. Favorite dishes: + tartare/Vietnamese Raw Beef + country pork pate + watermelon salad You won’t be disappointed.

Before You Write the Menu, Find the Soul of Your Restaurant A real series for new owners, seasoned operators, and anyone ready to re-center their restaurant around what actually matters. ⸻ 1/3 Let me tell you a story. Two restaurants opened a few blocks apart. First one had a fancy menu—thirty-some items, chef with a pedigree, nice PR write-up, photoshoot and all. The second? Had a dozen things on a chalkboard menu and mismatched chairs that looked like they came from somebody’s attic. Eight months later, the first one closed its doors. The second? They’ve got a three-week waitlist. What made the difference? The first one was chasing attention. The second one knew exactly what it was and why it existed. That’s the whole thing. That’s the work. ⸻ The Question Most People Never Ask When someone tells me, “I’m opening a restaurant,” the first thing they wanna talk about is food. “Should we do a gastropub?” “Farm-to-table but casual?” “What’s trending right now?” And look, I get it. Food’s important. But that ain’t where I start. The question I always ask first is: How do you want people to feel when they’re in your space? Because that’s your product. Not the burger. Not the look. Not even the menu. The feeling. If you don’t know what kind of experience you’re trying to create, then all the design and branding in the world ain’t gonna save you. You’re just another place trying to fill tables. And there’s plenty of those already. ⸻

I've been crazy fortunate to chronicle the Sacramento restaurant world's maturation into the outstanding, diverse, often-still-affordable scene it is today. And while I'm moving on from The Bee, I'm not going anywhere. Stay tuned! (3/3)

Eating at Chef Frank in Natomas reminded me of eating at Kru when it was at its much humbler K street location. The decor is modest but the food is amazing. sacbee.com/food-drink/res…

Really enjoyed Pocha House, which replaced Pour House at Q and 19th. Great food to drink beer with. They are still working thru the hiccups of being new, but worth the wait.

Never thought I would: 1. Care about 2. Watch 3. Enjoy A 41 second video about a grocery store’s new floors. But here I am, unreasonably excited that @CortiBros has a new floor. youtu.be/QxcOt9pGWHc

Dungeness crab is $5 a pound at Ranch 99 in South Sac. This is a fantastic price. Just steam them and they are ready to eat.

@blondealex Not the same operating group. Doesn’t mean you shouldn’t support a local restaurant but don’t expect the same cuisine and experience. Just the same name and space.
