Malbec, once just one of many varieties, found the environmental conditions for a radical physical evolution in its new home. In its native France, Malbec was a fragile and unstable grape, constantly threatened by humidity and frost. However, on the extreme altitudes of the Andes, the vine is exposed to brutal, unfiltered UV radiation and drastic temperature drops at night.
