Smoked up some waygu brisket 8#s turned out great. Cooked at 300ish total time with rest was just shy of 9 hours.

@MemphisBBQ_Ohio I've just run a few on a pellet grill but hot and fast wasn't bad fast rendered in most of it, it did have some parts that weren't great. It was also a small brisket that the local butcher had. That was the reason I tried it like I did.

@Currentsmokebbq What is your experience with low and slow? How many have you done that way? I just cant imagine it having the moisture and tenderness hot and fast that you get from low and slow? Im not knocking it, Im just curious.

First brisket I've done on a drum hot and fast. It wasn't too bad imo room for improvement of course but I'd serve it and I actually did. It went over real well.
