@siidekei Light meat = breasts (leaner meat, less flavor, good texture) Dark meat = legs, thighs, wings (fattier, stronger flavor, a little greasy) I could not decide which would pair better, so I simply used both. Good point about the hard boiled egg, I will remember it!

To my friends in America, There is a Japanese word called '魔改造-makaizou' . This means a magical/devilish (in a good sense) modification. I hope that we can increase wonderful makaizou like Texas BBQ onigiri through Japan-US cultural exchanges.

I served it with light and dark meat from the smoked turkey, and reserved a piece of turkey skin that I fried until crispy as the final garnish. Ta-dah! A very American holiday take on ramen! I hope you enjoy the cultural exchange!! 🙇‍♂️

Then I made a "tare" with soy sauce, garlic, and ginger that I added to the broth. I topped the noodles and broth with an onsen egg, chopped scallions, and I reserved the white scallions + garlic to make a fried chili oil garnish.
