Money borrowed for private consumption does not get you tax deductible interest.
You could borrow to invest... Which is one method for how people build investment portfolios, assuming that you can service the interest.

You could register a company a professional gambler, but then you'd have the pay tax on the winnings. That would pretty dumb, probably better to pay no tax on winnings and eat your losses.
AFAIK there is no law that requires you to be become a "professional gambler" even if you do it as your main source of income.
