Perfect crackling! Part 2 Once rested, slice the strings & remove! Carefully remove a decent layer of the skin off & set aside Trim excess fat off joint! Break crackling into bite size pieces & pop in oven with yorkies for 10-15 minutes! It’ll be puffed up & melt in the mouth!

Before you get tickets people please be aware that Heaton Park is the most hideous venue I have ever been to. The lack of organisation is biblical. From the bars to the toilets and security. And when it comes to transport! Be prepared for a 3-4 hour trip back to the city centre.
