quoteAgeBeforeSubmitMs = actual age
maxQuoteAgeMs = allowed age
If actual age > max, trade is blocked to avoid executing on outdated price and getting slipped/farmed.
Example:
age 2015ms, max 880ms => blocked (quote_stale)
TLDR: This is one kind of protection for better trade execution.
