This is Emmer, one of earliest domesticated cereals, as it comes off the combine. Like Spelt and Einkorn (and unlike more modern wheat) the grains are held in a husk and need to be de-hulled prior to milling or using as a whole grain. (The 2nd picture shows the grains.)
