@Ghostryderbogey I think it includes pig's brain which makes that mayo-like taste and texture

Start your workweek with sizzling railway Sisig with Agli Olio pasta
Good morning, Xmates!
Sisig was an accidental dish. Aling Lucing living by the railway in central Luzon was boiling pork ears and liver and proceeded to iron clothes. The dish unattended dried up and almost burned.
She decided to grill the partly burnt ingredients. Unsatisfied, she fried it in oil. Due to its unpresentable looks, she decided to chop all the ingredients and added chopped onions. Thus, the original Sisig was born. Plainly, NO MAYO, NO EGGS!
Taken my my column from Cook magazine in the early 90's.

@aoih1na That's true. And variants include bacon, chicharon, chicken, and beef.

@Ghostryderbogey A dish emerged by accident.

Sliced Moussaka
Layered with tangy tomato sauce, Béchamel and topped crusty cheese
Moussaka has roots in the cuisines of the Ottoman Empire, where layered eggplant dishes were common. The modern baked version with Béchamel became popular in Greece in the early 1900s, influenced by French cooking styles.

English

Lasagna originated in Italy, with its roots tracing back to the ancient city of Naples during the Middle Ages. The name comes from the Greek word “laganon,” referring to flat sheets of pasta dough.
Early versions were quite different from today’s dish, often lacking tomatoes (which were introduced to Europe much later).
The modern lasagna—layered pasta with meat, cheese, and tomato sauce—developed over time, especially in the region of Emilia-Romagna, where the classic lasagna alla bolognese became popular.

@aoih1na Welcome Missy Blue. Most of the food info are from my term papers.

Blueberry cheesecake is really a fusion of two separate traditions:
Cheesecake itself dates back to ancient Greece, where early versions were served to athletes during the first Olympic Games. The modern creamy style most people know evolved much later, especially after cream cheese was developed in the U.S. in the 19th century (notably popularized in New York-style cheesecake).
Blueberries are native to North America and were widely used by Indigenous peoples long before European settlement. They were later incorporated into colonial and American desserts like pies and preserves.
Putting them together—cheesecake topped with blueberry compote—became popular in the United States in the 20th century, especially as fruit-topped cheesecakes grew common in diners and bakeries. The pairing works because the tartness of blueberries balances the rich, creamy cheese filling.
In short: blueberry cheesecake is an American dessert that combines European-style cheesecake with native North American blueberries.
Good morning, Xmates!
