How I Make Beef Tallow for Cooking and Baking
You will need:
Several bowls
Oven proof pan
Fine mesh METAL strainer
Cheese Cloth
Containers to store Rendered Fat
You will need several pounds of Beef Fat. The minimum amount I would use is 5lbs. You can buy Beef Fat at any Butcher Shop and many Grocery Stores. I'm lucky, my small town Meat Mgr gives me all the Beef Fat Scraps for free. If your store doesn't sell it, call in the AM and talk to the Meat Mgr and ask if you can have their days worth of Beef Fat Scraps.
Doesn't hurt to ask!
You will have to put some time in(takes me an hour or so) to the first part if you get your Fat for free. Remember, they were going to throw this out, so it's going to have some meat on the fat. Second picture shows this
I call my Meat Mgr in the AM and ask him to set aside all the Beef Fat trimmings for me. He bags them up.
Remove as much meat from the Beef Fat as you can. If you have a little bit of meat here and there, that's fine.
I separate the fat and the meat in 2 separate bowls. The meat trimmings I keep. I will add that to Brisket to grind for when I need Ground Beef.
Next I separate the meat in to different pans to gauge how much meat I can render down per pan.
Turn oven on 225°
**IT TAKES 10-12 HRS TO RENDER THE FAT**
Place pans in the oven with no lids.
Stir the fat every hour.
The fat will be a rich, deep dark brown color and will float when it's done rendering.
Put the Cheese Cloth in the METAL Strainer and place over a large metal or heat proof bowl. Carefully pour the fat into the strainer.
You can save and wash the cheese Cloth or toss it.
Get your containers, Canning Jars, Food Grade Deli Containers, etc lined up.
Fill each one leaving enough room for expansion if you are freezing any.
You will have a BEAUTIFUL crystal clear yellow liquid when done. It will turn a creamy white color when it's completely cool
Let come to room temp, put lids on and store in the refrigerator or on the counter. Label & freeze the extra containers. Beef Fat freezes beautifully and will last a long, long time in the freezer.
