I'd say dark souls 3 or elden ring personally. Dark souls 1 is very clunky and can be hard to get into as a new player, dark souls 3 is a bit more of an optimized experience and elden ring being less linear and more open world let's you explore other places I'd you get stuck somewhere. Also there are lots of builds in elden ring that make the game "easier"
