Ground beef has a reputation problem it does not deserve. The assumption: it's the scraps. The floor sweepings. The parts nobody wanted, compressed into a patty because throwing them away would be wasteful. Here's what ground beef actually is: trimmings. The pieces of meat and connective tissue left after the butcher has taken the prime cuts. Which means it contains something a ribeye largely doesn't. Collagen. Collagen is the most abundant protein in the human body. It's the structural scaffolding for your joints, skin, tendons, gut lining, and bones. Your body makes it from glycine and proline. Glycine and proline are abundant in connective tissue. Connective tissue ends up in ground beef. The ribeye is premium muscle meat. Dense, delicious, and relatively low in collagen. If you eat nothing but muscle meat, you get a glycine shortfall. Researchers have calculated the shortfall at roughly 10 grams per day on a standard meat-eating diet: enough to affect collagen synthesis, sleep quality, and metabolic function. Ground beef closes that gap. On a budget. 20% ground beef from Aldi. Under £7 a kilo. Higher collagen than a £40 ribeye. Better amino acid profile for whole-body structural maintenance. It's not the poor relation. In some ways, it's the smarter choice. The ribeye gets the reputation. The ground beef does the work.
