Orange sweet potatoes have prevented blindness in 2 million African families. A single baked one can give you up to two full days of your Vitamin A. By today's USDA numbers, a medium baked sweet potato with its skin holds about 1,400 micrograms of Vitamin A, around 1.5 times what an adult needs in a day. A large one can push close to 2,000 micrograms, roughly two days worth. Almost all of it comes from beta-carotene, the orange pigment that gives sweet potatoes and carrots their color. Your liver converts it into Vitamin A only as needed, so you can't overdose from food. That pigment turned a root crop into a public health tool. In sub-Saharan Africa, Vitamin A deficiency blinds about 500,000 children a year and is one of the biggest drivers of childhood death. Scientists at the International Potato Center spent decades breeding orange-fleshed varieties with 50 times more beta-carotene than the white sweet potatoes traditionally grown in Uganda and Mozambique. By 2018, the orange version had reached 2 million farming households across Africa. In Mozambique, it now provides 78% of young children's Vitamin A intake. Maria Andrade, Robert Mwanga, Jan Low, and Howarth Bouis won the 2016 World Food Prize for the work. Two weird facts about this plant. Sweet potatoes belong to the morning glory family, named for the flowers. Regular potatoes belong to the nightshade family with tomatoes, peppers, and tobacco. And researchers have found 8,000-year-old sweet potato remains in a canyon in Peru, yet the plant reached Polynesian islands at least 500 years before Columbus. Scholars still argue over how. One practical tip. Beta-carotene needs fat to get absorbed. Eat a baked sweet potato dry and most of the goodness passes right through you. Adding a drizzle of olive oil or a pat of butter fixes that.

Children need sleep. It is common sense. Waking up your children at 4 am to go to school is ignorance. Pre-teens (9 to 12 years old) should be asleep by 9 pm and wake up at 6 am. Early schoolers (5 to 8 years old) should be asleep by 8 pm and wake up at 6 am. Preschoolers (3 to 5 years old) should be asleep by 8 pm and wake up at 7 am. Toddlers should sleep. They should not go to any school or day care. Children must all take a 30-minute to 1-hour afternoon nap. Sleep is necessary for brain development, hormonal health and mental hygiene. We are raising human beings, not robots.
