Yeah that part is a pain in the ass. Currently trying to get an app on the Play Store, but since I'm not an established dev I have to run a closed beta for 2 weeks with at least 10 people before they will put my app on the public facing Play Store. Does the iOS app store not have that kind of restriction?

If you have cancer and use AI to find the cure to cancer, what's the worse that can happen; the treatment gives you cancer? You die? Too late already had cancer, already was going to die. Matter fact, just use AI to cure that cancer that the other cancer curer caused. If AI finds a cure to all potential side effects, how important are the side effects? Just assume worse-case scenarios, simulate them, find solutions to them. Then can you can worry about less-severe edgecase symptoms as they appear.
