A final seasoning of salt and sugar and it's good to go. Tibetans have a profound taste for chilli, and will often serve this dish with extra chilli oil until glowing red! They have their own 'table chilli oil' which is a combination of chilli oil with Sichuan pepper - a undeniable link to the Chinese-Sichuan taste for 'ma-la' (numbing heat). Serve this with rice, I prefer it spooned into buttered flatbread or roti - to die for!

After a Chinese fandango the last couple weeks, I'm going to show you some lighter Indian dishes. This is a good chance to spotlight some fascinating micro-cuisines that fuse these two goliaths - natural fusions - so over the next week I'm going to show you a handful of lovely plates from across the Himalayas: from the harsh Tibetan plateau down to the lush, tropical foothills of Nepal. When I was 19 I spent the summer in this region. As I learned more about food, the Indian-Chinese gradient in this part of the world became really clear and interesting. The first dish I'll show you is from Tibet - it's called shogo katsa (ཞོག་ཁོག་ཁ་ཚ། ) - a rich and creamy potato dish from one of the harshest environments on earth - and possible in your own kitchen. Let's go!

@FouthTimeLucky On Ambuscade, I lived in 2 Delta Mess. 36 of us in there. Six gulches with six pits in each, three each side. Mess square was as above. We had a TV and VCR. Our way of contact was via handwritten mail, sent and received via the Lynx. No internet, email or mobiles in the 1980's.⚓️
