The most useful thing to know before you plant anything is how long it actually takes. Plant spinach in early spring and it's done before the tomatoes even go in. Plant tomatoes in May and they're still producing when the spinach goes in again in fall. 🌱 Nine vegetables and their average days from seed to harvest: - Spinach — 30 to 50 days. The fastest crop on this list. Direct sow in early spring as soon as the ground works, again in late summer for fall harvest - Cucumbers — 45 to 70 days. Direct sow after last frost when soil is warm. Pick frequently — leaving cucumbers on the vine signals the plant to slow production - Green beans — 50 to 65 days. Direct sow after last frost. Bush beans need no staking, mature all at once, and can be succession-sown every 3 weeks for a continuous harvest - Peas — 60 to 70 days. Direct sow in early spring, same time as spinach. Peas stop producing once temperatures stay above 75°F - Tomatoes — 60 to 90 days from transplant. Start seeds indoors 6 to 8 weeks before last frost. Days-to-harvest varies significantly by variety — cherry types tend toward the low end, large slicers toward the high end - Carrots — 60 to 80 days. Direct sow in early spring or late summer. Thin to the correct spacing or they'll produce forked and undersized roots - Broccoli — 60 to 100 days from transplant. Start indoors 6 weeks before last frost for spring, or 10 weeks before first fall frost for fall harvest - Potatoes — 90 to 120 days. Plant seed potatoes 2 weeks before last frost. New potatoes can be harvested early; full storage potatoes need the full season - Corn — 90 to 120 days. Direct sow after last frost in blocks of at least 4 rows for good pollination. One of the longer crops — plan your space accordingly The fastest beds to fill: spinach, cucumbers, and green beans. The crops that need the full season: corn and potatoes. 🥬
