@yamanakanobody We call them colloquialism, and each area of the states has their own unique ones! Im in Orange County California (beaches) and we say things like "Whats hanging" which really just means "whats going on" or "how is it going/how are you"

Last night at 9 pm I put a seasoned pork shoulder in the pellet smoker at 225F (107 C). It was 8.5 pounds (3.8 kg). At 4:30 am today, I took it out of the smoker, after 7.5 hours. It wasn't cooked the way I like yet, so I put it on a raised rack, lined a big pan with aluminum foil, & put the rack on the foil. See photo. I poured in some boiling apple juice, and sealed the foil closed around the meat. Then put it in the home oven at 225 F (107 C) for 2.5 hours. Then unwrapped it, raised the oven temperature to 400F (204 C) to make the fat crispy in about 20 more minutes. I let it rest for 30 minutes, then sliced some of the smoked roast to have with fried eggs for breakfast.
