My team all had huge struggles PQing last year, mostly because the countries we were in report blood test results slightly differently than the US. Emails from UTMB were often rude and requirements unclear. Caused so much stress and cost thousands.

@MarloWordyBird I often had similar problems in the US and decided it was most likely the flour. Flour holds quite different water contents depending on humidity. The protein contents of 'all purpose' flours can also differ by country. On the plus side, my white sauce never went lumpy in the US!
