Our name ‘Kinboshi’ refers to the ‘underdog victory’ when a lower ranked sumo wrestler wins a challenge sumo match with a yokozuna, the grand champion. It’s representative of our humble roots to what we aspire to on our ramen journey - winning the hearts of those who dine with us

We’re proud of introducing PDX to Hakata style ramen. We listen to our customers locally. That’s why we crafted items like vegan ramen. With the desire to add much more, we’re operating independently from our original partners in Tokyo. Our PDX based team stays the same.
