🍴 Stop Building Mediocre Restaurants and Hotels: It's Time to See How the Sausage is Really Made! 💰 There’s an old saying: "It is better not to see either how the law or the sausage is made." The idea is that the final product is better than the messy process behind it. When it comes to investment in the African hotel and restaurant industry, I completely disagree! Investors, you need to see exactly how the sausage is made before you attempt to make it. We all love the Front of House (FOH): the plush decor, the beautiful art, the comfy beds, and that perfectly presented plate. It’s what customers experience. But here’s the unsexy, profitable truth, especially in the Kenyan market: A great FOH is simply a reflection of an exceptional Back of House (BOH). Right now, way too much Kenyan capital is being poured into visually appealing, yet operationally inefficient, average-to-mediocre businesses. They look great at first glance, but they’re profitability nightmares. Think about it: * A professionally designed kitchen with smart workflow doesn't just produce exceptional food; it reduces staff headcount, minimizes waste, and boosts margins. * Integrating a Chef's Base into your kitchen design or setting up a sleek front office system isn't just about efficiency—it could be the difference between a recurring monthly staff cost for 10 people and one for 5. Less recurring costs = greater profitability. Before your next venture, stop obsessing only over the aesthetics. Invest time in understanding the operational blueprint. Learn how to build a great sausage-making factory, not just a pretty plate for the sausage. We need to raise the bar for operational design and efficiency in Africa's hospitality sector. Let’s stop wasting good capital on bad flow. The truth is: a great back of house builds a great front of house. It’s what turns a beautiful-looking venue into a profitable, sustainable business. 🎙️ The Training Treadmill: When Learning Outpaces Doing A powerful quote from Film Director Tosh Gitonga on episode 27 of The AfriCAN Do! Podcast struck a chord: "we keep training more and more to go where?" Tosh was highlighting a critical imbalance in our development ecosystem, particularly in Africa. We see a deluge of training programs, technical assistance, accelerator programs, and capacity development initiatives (the 'how-to'), yet a significant lack of investment in the actual implementation, infrastructure, and contextual distribution channels (the 'the-thing'). The Consequences of Imbalance This imbalance has created a massive training ecosystem—a lucrative space for consultants and capacity builders—that follows the available funding, while the essential infrastructure and market mechanisms required for success are left starved of capital. 1. Film & Content 🎬 As Tosh pointed out, we are constantly training filmmakers and creators in production techniques. But where is the comparable investment in contextual distribution channels? Without platforms, local cinemas, or innovative digital channels that genuinely reach African audiences and ensure creators are compensated, all that brilliant training results in a shelf full of unmonetized, unseen content. 2. Agriculture & Distribution 🍎 The situation is mirrored perfectly in agriculture. We fund countless programs to train smallholder farmers in Good Agricultural Practices (GAP), resilience, and climate-smart farming. The farmers learn to maximize their yields and improve quality. However, the investment in the post-harvest logistics, cold storage, reliable transport networks, and market linkages (the 'the-thing' for farmers) is often insufficient. What good is a perfect crop if it rots waiting for a distributor, or if the farmer has to sell it at a throwaway price to a middleman due to a lack of direct market access? The training becomes a frustrating bottleneck rather than a path to prosperity. Why This Needs Urgent Change The current model is a development paradox—it is effective at creating skilled individuals but fails to build the necessary environment for those skills to thrive. It's a continuous investment in potential without an equal commitment to realizing that potential through tangible infrastructure and market access. The shift must happen now: * From Capacity Building to Capital Investment: We need to pivot resource allocation to fund the doing—the infrastructure, the distribution channels, the market-creating enterprises. * From Workshops to Widespread Access: Training must be paired with secured pathways for the trained to immediately apply their skills in a functioning, well-resourced market.
