Update from Modena Italy + Spoiler Alert (long post incoming) The next product for Oliva Dorado will be... A balsamic vinegar. I have been asked for this product more than anything else, for good reason. Every great olive oil needs a great balsamic vinegar. I was deciding whether or not I wanted to share some of the process or wait until it's ready... and I decided I'm fully going to show the behind-the-scenes of me sourcing the best vinegar in the world. Similar to my olive oil, I want to find the best tasting and highest quality balsamic vinegar I can find in the entire world and offer that to you guys with the click of a few buttons. As someone who grew up not liking vinegar and knew nothing about the industry, I have completely gone down the rabbit hole the last few months to learn everything possible. Also similar to olive oil, there are a lot of problems with mass-produced conventional vinegar, with blends from multiple farms, added ingredients (typically caramel and sugars), and non organic grapes sprayed with pesticides and chemical fertilizers. When deciding where I wanted to source the best balsamic vinegar from, there was no better place to start than the balsvinegar capital of the world: Modena, Italy. Here in Modena, there are several farms that have been producing vinegar of the highest quality for hundreds of years, still owned by the same familes. Just like my olive oil, I want to partner with a family owned farm to bring Oliva Dorado Vinegar to the U.S., focusing on the quality and story behind the product: - Organic - Everything done on site, including growing the grapes and creating the vingear, without outsourcing any part of the process - No added ingredients - No blends - Certified DOP or IGP, which are the most important certifications offered to vinegar producers, with an important distinction being that the grapes and vinegar must be made in Modena, Italy, which is believed to have the best microclimate in the world for creating vinegar I recently arrived to Modena where I will be living for 2 weeks while meeting with different vinegar producers every day Stay tuned...
