A hero who served his community and his country faithfully for 38 years as a police officer … fatally shot on duty 6/2/2020.

Today I would like to remember a classmate who gave all , Maurice O’Callaghan. He was the first student graduate from John F. Kennedy High School who was killed in the Vietnam war. Our school honored him with a ceremony and plaque. He was his parents’ only child. He was kind and generous and dreamed of being a veterinarian. He was my friend!

Roasted Beet & Goat Cheese Mini Tartlets
Ingredients
For the Tartlets
1 sheet puff pastry, thawed
2 medium roasted beets, diced
4 oz goat cheese, softened
1 tbsp honey
1 tsp fresh thyme leaves
1 tbsp olive oil
Salt & black pepper to taste
1 tbsp balsamic glaze
Fresh microgreens or thyme for garnish
Instructions
1. Roast the Beets
Preheat oven to 400°F (200°C).
Wrap beets in foil and roast for 45–60 minutes until fork tender.
Let cool, peel, and cut into small cubes.
Toss beet cubes with olive oil, salt, pepper, and a drizzle of honey.
2. Prepare the Puff Pastry Shells
Roll out puff pastry slightly and cut into small circles or squares.
Press each piece into a greased mini muffin tin to create little tart shells.
Prick bottoms lightly with a fork.
Bake at 400°F (200°C) for 12–15 minutes until golden and puffed.
Let cool slightly.
3. Make the Goat Cheese Filling
In a bowl, mix softened goat cheese with a little honey and thyme until creamy.
4. Assemble
Spoon goat cheese mixture into each tart shell.
Top with roasted beet cubes.
Drizzle generously with balsamic glaze.
Garnish with fresh thyme or microgreens.
Tips
Add chopped walnuts or pistachios for crunch.
Serve warm or chilled.
Perfect for holiday appetizers, brunch tables, or elegant party bites.
