
Cao Lau
Hoi An's pork noodles are quite similar to the dishes of other cultures that visited this trading port in the past. The thicker noodles are similar to Japanese udon noodles, the crispy wonton noodles and pork remind people of Chinese food, and the broth and herbs are distinctly Vietnamese. Authentic Cao Lau is only cooked with water taken from the local Ba Le well.
