The second category has been feeding humans without cardiovascular assistance for far longer than cardiovascular disease existed as a documented condition.

Chloe woke up at 6:45am and immediately felt proud of herself. She had, after all, not eaten a single animal product in four years. The planet was healing. She could feel it. 6:52am - Applied her morning SPF. The SPF contains beeswax. Chloe does not know this. Moving on. 7:10am - Breakfast: a smoothie containing avocado. The avocado was grown in Michoacán, Mexico, on land where a pine forest was until 2019. It required approximately 320 litres of water to produce. It was flown to the UK. Chloe sprinkled hemp seeds on top. The hemp seeds came from China. Chloe felt connected to the earth. 8:00am - Got dressed. Polyester leggings, derived from crude oil. A bamboo top that was processed using carbon disulphide in a Taiwanese chemical plant. Trainers with a recycled plastic upper that sheds microplastics into waterways with every wash. Chloe's outfit today had a higher carbon footprint than a ribeye steak. Chloe does not know this either. 9:30am - Posted on Instagram about choosing compassion. The phone was manufactured in a Shenzhen factory using cobalt from the DRC, where mining operations have displaced local communities and killed an unknowable number of small mammals, reptiles, and insects. The algorithm served Chloe an ad for oat milk. Chloe liked it. 12:00pm - Lunch: tofu stir-fry. The soy was grown in Brazil. Brazil produces more soy than almost any country on earth. The primary reason is soybean oil: one of the most widely used industrial and culinary oils on the planet. The soymeal left over after oil extraction is fed to livestock as a byproduct. Chloe is aware of the livestock connection and finds it outrageous. She has not looked into why the soy was grown in the first place. The answer is the oil. The oil is in her salad dressing. 1:30pm - Drove to the garden centre. The car runs on petrol. Chloe has a Just Stop Oil sticker on the bumper. This is not being commented on further. 3:00pm - Bought a monstera. The monstera was grown in a Dutch greenhouse using natural gas heating. Chloe put it next to the pothos that is slowly poisoning the neighbourhood cats. 6:00pm - Dinner: pasta with cashew cream sauce. The cashews were processed in Vietnam, often by workers in conditions that would prompt significant commentary if they were in an abattoir. 8:00pm - Watched a documentary about factory farming. Wept. Posted about it. Caption: "We have to do better." Chloe is, by every measure she has chosen to measure by, doing brilliantly. By some of the others, the picture is more complicated. Chloe has not chosen to measure by those.

If you genuinely believe a skinless chicken breast is healthier than a Wagyu steak, your ancestors are watching you from wherever they are and they are not proud. These are people who spent three days cracking open a mammoth femur to get the marrow out. Who rendered every scrap of fat from a kill because fat was survival. Who ate brain, liver, heart and kidney not because they were adventurous but because those were the good parts and you did not waste the good parts. They hunted for the fattiest animal on the plain. When they got it, they fought over the organ meats before the muscle was even divided. The lean cuts went last. And you, with all of recorded history, all of nutritional biochemistry, all of the accumulated wisdom of thirty thousand years of humans eating animals, have decided that the watery white muscle of a bird that never moved is the pinnacle of human nutrition. You are standing on the shoulders of giants. The giants are begging you to eat the fat.

Let's check in on Gerald, who is diverting food from starving children. 6:00am - Gerald ate grass. The grass grew on a 40-acre clay slope that has been permanent pasture since 1763 and cannot grow human food. The starving children situation was not affected by the grass. 7:30am - Gerald ate some hedge browsings. Hawthorn and field maple trimmings from the east boundary. Not on any nutrition label. Cannot be processed into human food. Gerald ate them. The hedge now needs less management. Gerald charged nothing. 10:00am - Gerald ate some brewers' grain. This is what is left after barley has been used to make beer. It is spent. The sugars are gone. The protein remains, but in a form that is nutritionally marginal for humans. The options for this material are: Gerald, biogas, or landfill. Gerald ate it and is turning it into beef. 12:00pm - Gerald ate silage. Silage is fermented grass. The grass came from the same field it always comes from. The field cannot grow crops. The silage cannot go to Ethiopia. Silage requires a rumen. 2:00pm - Gerald ate more grass. Gerald has now been eating things that cannot feed humans for eight consecutive hours. At no point today did Gerald intercept a food supply. At no point today did Gerald remove calories from the human food system. At every point today, Gerald was converting materials that are nutritionally useless to humans into beef, B12, zinc, iron, creatine, heme iron, and fat-soluble vitamins. The beef will go to the abattoir. The beef will go to the supermarket. The beef will go to families in Ledbury and Bristol and Wolverhampton. Gerald is the only system that connects these waste materials to human nutrition. Gerald does not know about Ethiopia. Gerald does not know about the global food system. Gerald is in the south corner. Gerald is converting the unconvertible. You're welcome.

@Materye1 När jag var barn och åkte i baksätet på en bil kunde det ibland suga till i maggropen om bilen körde i en lång nerförsbacke. Den känslan växte bort med tiden. Men sen träffade jag en gång en person som fick mig att känna precis så när jag stod alldeles stilla på flat mark.
