🥔 The potato skin hides a chemical secret: ferulic acid amides act as “bridges” that strengthen its cell walls. They link with lignin and suberin, forming a tough natural network. A clever strategy from nature — and a clue for designing sustainable materials. 🌱🔬

👩‍🔬👨‍🔬 @susanagpuyol and @JA_Herediag have contributed to this research, uncovering how potato skins are reinforced at the molecular level. Plant-based science at its finest! 🥔🔬🌱
