If you haven’t tried Picanha, WHY?! Picanha may also be called the rump cap, sirloin cap, or coulotte steak. The buttery fat cap sets it over the top as it renders during the cook. 🥩 ❤️

340B advocates will lie to you while taking money out of your pocket. They claim here that the program costs taxpayers $0. The Congressional Budget Office begs to differ, stating, “the 340B program encourages behaviors that tend to increase federal spending. Those behaviors include the prescription of more drugs and drugs that cost more, reductions in negotiated rebates for insurers, the expansion of services, and increased vertical integration among facilities.” Additionally, research has shown that the 340B program increases healthcare costs by over $1B for state and local governments with costs per beneficiary 10% higher simply because of this one program. Meanwhile, hard working Americans are paying more for their insurance because of 340B. To quote one study “costs for self-insured employers and their workers were 4.2% higher than they otherwise would have been if the program did not exist.” At least when pharma makes a profit they provide a product and pay taxes. 340B hospitals simply extract wealth.

@crappiedoc I always thought we were supposed to use the fat from browning the meats. Doesn’t everyone do it that way? LOL Bacon grease is an excellent oil for roux as well. It really adds a lot of depth to my seafood gumbo.
