Every team member at Loyalist spends time on the ground with our restaurants! In the hospitality industry, this is called a stage — an opportunity to shadow a restaurant team and see what happens behind the scenes. A few weeks ago, I spent time at Bridges, a newly Michelin-starred gem in the heart of Chinatown. The evening felt like an improv dance — so graceful and precise, almost choreographed, even though no two nights ever look the same. What I appreciated most was how effortlessly the team adapted to each table. Old friends catching up -> slow down their mains! Wine-lover tag -> the somm will swing by. A longtime regular coming in at 7 -> the kitchen will send a few extra plates. And Nic, a co-owner, told me something I’ll always remember: “Loyalist helps you understand your regulars. Regulars are the lifeblood of our restaurant.” So it wasn't a surprise when Bridges earned their first Michelin star last week 🥹 I'm so grateful for their team giving me a night I’ll carry into every customer call, late night, and product conversation. PS if you go, you have to get the uni custard
