Most people will not be willing to pay a 300% markup for a wine they are not familiar with because they run the risk of not enjoying it but paying a fortune so they’ll stick to what they know.

@RachAlberts But then you must vote with your feet and go to restaurants with interesting lists. Since so few customers care (in fact, I’d say the opposite is true - people prefer familiarity) if we want change, we have to support those trying to be different.

As a wine drinker I agree because I’m sick of seeing the same 10 wines on every list. My kingdom for exciting choices!
