We visited @LuckyRobotATX yesterday out on South Congress for their Tokyo Brunch happy hour. Fun spot!

Make big batches of pesto ahead of time and freeze them so you can make quick weeknight meals! Last night, we combined carrot top pesto with pasta, shrimp, tomatoes, beet greens, and collard greens. It only took 15-20 minutes!

@ChristiWhip I'm having some for lunch too! Great with bread. I think I'll make it again but try mussels next time...no cheese or chicken.

@ChristiWhip The top is melted fresh mozzarella and underneath are chicken breasts. They're in a fresh tomato garlic fennel sauce/broth with dandelion greens, all from a local farm :) I'm not sure what to call it but it was pretty tasty!
