Crystallised honey has not 'gone off.' These two jars are from exactly the same hive. The left hand jar has been gently warmed to return it to liquid without damaging the honey. Crystallisation or granulation is caused by a higher glucose content in the nectar the bees collected.

If you're not a fan of colder weather, you'll be pleased to hear temperatures are set to rise over the weekend 📈 It will be short-lived however, as temperatures return to, or slightly below, average for the new working week 📉

Karl von Frisch, Austrian entomologist and Nobel Prize winner, was born on this day in 1886. He is best remembered for his work decoding honey bee waggle dance behaviour. His key book 'The Dancing Bees' was published in 1927
