People often think that there wasn't any "pandemic media", as in no media directly addressing the pandemic or having it as a central point. And... they're wrong actually, there's heaps of games and horror that uses virus as explicit themes.
There were a bunch of big studio games made during the pandemic that focused on plague as a major plot point. Avowed, Baldur's Gate 3, Horizon Forbidden West, Tainted Grail, Nier Replicant, Plague Tale, Callisto Protocol. Mostly fantasy themed, which is funny because who wants to escape from the pandemic into a fantasy world that is also undergoing a pandemic? Resident Evil games also saw a resurgence, although that's likely due more to them pumping out excellent games and highly requested remakes.
A major theme in analog horror is viruses or infections: smile tapes, tangi virus, Midwest Angelica, Man in the Suit, Gemini Home Entertainment, the Painter. Gemini highlights the other major theme that is rooted in the pandemic: doppelgängers.
Of course the big one was Among Us (made before the pandemic but became popular during it), but there were heaps of indie games dealing with doppelgängers either released at this time or got a big boost. No, I'm Not A Human, Unfortunate Spacemen, That's Not My Neighbor, even F&H: Termina had some. Signalis released in 2021 had both a virus and doppelgangers!
A big element in analog horror is the familiar being recontextualised or made into outright horror. I'd trace it to FNAF and mascot horror- in fact there is a LOT of FNAF analog horror- and even further back to Lovecraft. The idea that the familiar and every day can suddenly become dangerous is the core of doppelgänger horror. Mandela Catalogue was created in mid 2021, which is primarily about evil doppelgängers. Gemini Home Entertainment has the mimics and wood crawlers.
But this highlights a more subtle side to "pandemic horror": information control, already a big issue in society, came to a head during this period. We thought that if we could just "spread the right message" and behave properly, it would counter the virus. The fight against "misinformation" was huge, as big or perhaps bigger than spreading proper procedures. Many people thought that the health authorities had no idea what they were talking about, and they w[REDACTED].
Mandela Catalogue and Among Us are probably the defining pieces of "pandemic media". (At least Mandela was at the time, it's still ongoing.) In both, not only can you not trust the people around you, you can't entirely trust the information given to you by anyone else. It's a complete erosion of social bonds. That dissolution is fertile ground for... well, what we've got now.
The Painter is possibly the defining "post-pandemic media" because of that, but we'll talk about that more soon.
