To make Quello, we blended Trebbiano and Pagadebit grapes, both from Emilia-Romagna ( 🍽🏎🍝😋) region of Italy, and allowed them to fermented naturally. We added no carbon dioxide and no glycerin. In fact we added nothing at all except the can.
