Let me just reiterate this since so many people seem to be embracing the ludricrous notion that cows are "carbon neutral".
First of all, they aren't even in the narrowest sense. There are large energy inputs in transportation and fertilizer production, among other things, that are not carbon neutral. And there continues to be large amount of land clearing for cattle globally. But even if you stipulate that it's carbon neutral, it's not climate neutral. If I burn down a forest, and immediately plant new ones, and wait 30 years for them to grow back, that is carbon neutral in the same way cows are. But the carbon molecules that used to be in the trees now spend on average 15 years as CO2, thereby increasing planetary warming. The same exact thing is going on with cows. If you compare the total amount of GHGs, and their warming potential, in the atmosphere today to a world where we do not use livestock in food systems (accounting for the land and climate impact of the food crops needed to replace them), there would be ~800 Gt less CO2, and massive reductions in steady state levels of CH4 and N2O. This would massively reduce the warming potential of the atmosphere - an impact comparable to a complete cessation of fossil fuel burning for 30 years. So spare the crap about cows being "carbon neutral", because they are not, in any honest and meaningful sense of the term.
