Mango Coconut Pudding
Ingredients (Serves 4–5)
2 cups ripe mango flesh (about 2 large mangoes)
1 cup coconut milk (full-fat for creamier texture)
½ cup milk or evaporated milk
⅓–½ cup sugar (adjust to taste)
2½ tsp unflavored gelatin powder
3 tbsp cold water (to bloom gelatin)
1 tsp vanilla extract (optional)
Toppings (optional):
Fresh mango cubes
Coconut flakes
Mint leaves
Instructions
Blend the mango
Puree mango flesh until completely smooth.
Bloom the gelatin
In a small bowl, sprinkle gelatin over cold water
Let sit 5 minutes until it swells
Heat the base
In a saucepan, combine coconut milk, milk, and sugar
Heat gently (don’t boil), stirring until sugar dissolves
Dissolve gelatin
Add bloomed gelatin into the warm mixture
Stir until fully dissolved and smooth
Combine everything
Remove from heat
Stir in mango puree and vanilla
Mix well until silky
Strain (optional but recommended)
Strain for ultra-smooth texture
Set the pudding
Pour into molds or bowls
Refrigerate 4+ hours until firm
Serve
Unmold onto a plate
Top with mango cubes, coconut flakes, and mint
