Baking question. Why aren’t cobblers made with choux pastry?

I let my 3 year old son pick out the flowers for Mother’s Day and he picked out these flowers that just keep blooming and getting better. This kid picked out better flowers than I ever have.

I'm in a bit of a rage so this thread wont be pretty. I am in a rage at the calculated way the Ford/Harris grifters focused on business needs over people throughout the pandemic. I am in a rage because decisions were made which left our eldest and youngest vulnerable. /1
