It does not consist of the letters written after Jesus's passing, the personal interpretations of the Gospel writers etc.

The Quran explicitly commands Christians in Muhammad's time to judge by the Gospel ("Let the People of the Gospel judge by what Allah has revealed therein" - Surah 5:47) and boasts that none can change the words of Allah (Surah 6:34). If the Gospels were already corrupted human fabrications when Muhammad was alive, why did Allah command people to follow them? Your theology traps you: either the Quran is wrong about the Bible being from Allah, or Allah commanded people to follow a human-made lie.
