Grilled chicken in a cream lemon sauce with courgettes and aubergines, on top of a roast butternut squash. Boiled rice with cumin, fennel and nigella seeds.

Sauce took 10h to cook - veggie stock used to make a boosted turkey stock, then reduced in a red wine reduction, passed twice through a chinoix, thickened with cooked roux and finally glazed with butter.

@Alan_Couzens Easier said than done without coaching. My pace over 1500m was 2:30 1 year ago, and with 3-4 sessions per week is now ~2:00 - I know the theory but tricky to put into practice well.

Your regular reminder that #swimming is a technical sport. Your typical elite swimmer can cruise along at ~1:20/100m at a VO2 uptake of 3L min (50 minute Ironman split) Your typical novice will be >2:00/100m at the same fitness/VO2 cost! (76 minute Ironman split!). If you're generally fit, but slow in the water, technical improvement offers some low hanging fruit! 🍋
