Yes, every Gammoth we fight is female, but it isn't because the males are extremely dangerous. In fact, male Gammoth have never been mentioned so far. In-Game Glavenus = Male Astalos = Male Gammoth = Female Mizutsune = Male Yes, these genders apply to their Deviants as well.
