Fast-food chicken nuggets are less than 50% actual meat. According to a study by Dr. Richard deShazo, a professor at the University of Mississippi, chicken nuggets from major fast-food chains contain only about 40 to 50 percent real muscle meat. The rest is a mixture of fat, skin, connective tissue, blood vessels, nerves, and even small bone fragments — all hidden under the familiar golden breading. Using microscopic analysis, researchers found that what many people assume is lean chicken breast is often a heavily processed blend of cheaper chicken byproducts. While perfectly safe to eat, the final product is far from the wholesome piece of chicken many consumers imagine.
