Tcw Anakin was simply intended to have a stylized version of his brown AOTC robes, just with added armor. They saturated the colors on the model a tad bit too much, leading people into believing they are separate outfits and eventually canonizing the blue/red robes in Ahsoka.

Totj has p1 Rex and p2 Rex with 2 different pauldron and base armor designs even though they're both supposed to represent the same Rots style pauldron in live-action. The same can be said for Anakin's Red vs Brown robes. The earlier TCW Anakin model is just heavily stylized.
