Microwave popcorn sucks. Here's how you make movie theater popcorn at home: 1) Get popcorn oil. This is typically coconut oil that's been colored orange by beta carotene and has added butter flavor. Put two spoonfuls in a stainless steel pot and melt at medium temperature. 2) Before the oil gets too hot, add unpopped kernels. How much depends on the size of your pot, but expect them to expand to 45 times their size when popped. 3) Before the kernels pop, sprinkle on Flavacol. This is a yellow flavoring salt, and it's the secret they use at movie theaters. 4) Cover and allow the kernels to pop. Jerk the pop around to keep the popcorn from sitting in place for too long so they don't burn. Once the popping slows down to the point that you can count to three between pops, pour the popcorn into a large bowl. 5) If desired, drizzle on melted clarified butter or ghee. Note: You can't find Flavacol in grocery stores. It's also unlikely your local grocery stores have popcorn oil (I'm not talking about that orange one Orville Redenbacher makes which is just colored vegetable oil). You can find both online. Amazon has them.
