Tonight I roasted aubergines with crushed ñora, garlic and a slick of olive oil—twice-baked until the skin wrinkled and smoky sweetness took over. I ate it with warm pan de cristal. Might try stuffing them next time, maybe with pine nuts and herbs? 🤔
