Chipotle doesn’t use chicken breasts nor chicken thighs
They use boneless skinless chicken leg quarters, this explains why their chicken tastes very “jiggly”
The cost for this leg quarters is far cheaper than chicken breasts and thighs
Leg quarters are dark meat with higher fat content, more connective tissue and a looser muscle structure, that’s why it’s softer and “jiggly”
The cut is flavorful but know that flavor is coming from connective tissue and fat
