WHAT THE HECK IS THAT STUFF ON THE OUTSIDE OF MY SALAMI?! Well, it’s mold… and we’re damn proud of it. That white stuff is an edible mold (similar to what’s on cheese) called penicillium, and it’s a very, very good mold.
