Since we’re Mexican we eat a looooot of Lebanese food. For special occasions we make lamb!
Ive heard the reason spanish and Polish words for “onion” are the same because of diaspora and idk if it’s true but I still like to think it’s cute.

@USSR1987t @GianmarcoSoresi The “soup with three B’s” is also frequently “Jewish aspirin” of course. Haha. Anyways I trust you will master fat. Claudia isn’t Ashkenazi either. (She fled from Egypt to Britain) She wrote the book I showed you from her interviews with Jews from around the world.

I like to make the broth hearty but only because matzah ball soup to me is like a “you’re sick, eat this” and being in a comfortable bed kinda food.

@USSR1987t @GianmarcoSoresi I really like the economics of soup: you essentially should not need to use *any* of the “good” meat in the soup. Breaking apart the carcass is fun, while a lot of work.

@USSR1987t @GianmarcoSoresi this fat is not normally rendered, (it is still wet!) So it must be used immediately (it will go rancid more quickly).
It is also quite a bit more “refined” as it has lost some of its flavour to the water/broth.
You can still use it just as a fat for cooking just fine)

We don’t keep a kosher home, so sometimes there’s pork, but waste? Never.

@USSR1987t @GianmarcoSoresi If you have this “saved” fat (without separating it you would probably just discard it, and many (especially goyim, of course) do this either way. but I consider chicken fat to be kind of liquid gold, so I’m a bit crazy about it) you can sort of use it where you would schmaltz.

What we call a Dutch over is basically an all-purpose “pot” . It has good heat conduction from the bottom to top, so you can fry an egg or bake a pie in them

@USSR1987t @GianmarcoSoresi Cast iron is great, Dw. Just put the heat low. Anyways, sometimes your soup/broth will, despite your best efforts to not include this fat, still have too much of its own fat. What you can do is let the soup/broth cool down outside in the cold to let the fat solidify.

@NathanL0lz @GianmarcoSoresi Ironically I was using a Dutch oven. I take a whole chicken (with veg) and boil it for about 40m to make a hearty broth, but that chicken gets frozen and not used for soup. I tried the fat trimmings from another chicken, but my cast iron should do the trick.
