Just because you have to wait for some guy in a fancy wig to make it official doesn't mean anything. Plenty of innocent people go to jail, plenty of guilty get off.

The sauce has to have the right amount of seasoning (everybody is different). I just use mozzarella for 50pence from the supermarket. I feel like it's the least important ingredient.

Get the good mozzarella and you've got a more expensive pizza that tastes the same Cheese is cheese, you pay for the packaging and the name It's all in the sauce. The sauce defines it. Toppings ruin it.
