Tarantino put himself into a box deciding his next movie would be his last, so he's likely being way more fussy about what that's going to be. He had it lined up to be about a film critic initially then scrapped it.

Am I allowed to say Quentin Tarantino simply for the fact Tarantino hasn’t made a movie in almost 7 years? I honestly think that’s worse than making stinkers. To make a bad film is to at least try. Tarantino sort of acts like he’s above Cinema right now. I don’t love his stance.

The stable income and gainful employment wasn't his problem, it was the demoralizing environment he was in. The movie literally ends with him gainfully employed elsewhere and much happier.

Dude, I'm team RDR2 but I wouldn't say that was a robbery. It's not Shakespeare in Love beating Saving Private Ryan, it's like No Country for Old Men beating There Will Be Blood. Two greats, one had to win, and GoW was a worthy winner.

It's one of the more sensical changes. Anakin effectively died in Revenge of the Sith, if the point being conveyed is he redeemed himself, he would obviously appear in his younger form.
